Tasting notes: Dried apricot, orange marmalade on biscuits, and a spot of tea

A minor deviation from a beloved English pale ale. We start with a base of heritage Chevallier English barley and add a properly restrained amount of East Kent Golding hops, and then ferment it with a favorite English ale yeast. It’s colored a bit outside the lines with a modest amount of Santiam and Michigan-grown Cascade hops. It’s not traditional, but it’s faithful to the spirit of the thing, we assure you.
