Foeder Spelt Saison

Tasting notes: ​Peach, lemon, apricot

Primary fermentation for a week with a blend of Blaugies saccharomyces and Rockwell House Brettanomyces. Transferred to foeder with Rockwell mixed culture for 4-12 months of extended fermentation and aging. Beer naturally conditioned and carbonated in package for an additional 2 months prior to release. Total production time is 6-14 months. Slightly acidic, bright, and sour.
