Belgian-Style Tripel (Cruz Blanca Brewery Collaboration)
How Sweet of Me is our homage to Belgian-style Tripel that we created with our dear friend Jacob Sembrano of Chicago’s Cruz Blanca Brewery. Inspired by a favorite strong pale ale of Bruges, we added piloncillo sugar for a note of caramel and molasses and just enough Indian green coriander at the end of the boil to provide a subtle citrus and spice note that peaks curiosity but doesn’t allow you to quite put your finger on it. It’s strong and decadent with a growing warmth that aims to please.
